Recipes: Warm Banana Bread

When you ask me what my idea of autumnal comfort food is, I visualize snuggling in a sunny corner love seat with a cashmere throw draped over my shoulders, reading a good book and nibbling on just-baked warm banana bread with a cold glass of milk.
I decided that this sudden Seoul chill requires just that, so I baked some banana bread (adapted from here) to warm my soul.

What You'll Need (serves 4):
  • 2 cups (250 grams) of all-purpose flour
  • 1 cup (125 grams) of granulated sugar
  • 1 tbsp of milk
  • 3 tsp of baking powder
  • 1 tsp of salt
  • 1 tsp of ground cinnamon
  • 8 tbsp (120 grams or 1 stick) of room temperature unsalted butter (I used sweet unsalted butter)
  • 2 large eggs
  • 3 RIPE bananas (the riper, the better ^_~)
What You'll Do:
  1. Preheat the oven to 163ºC (325ºF). 
  2. Butter a loaf pan.
  3. In one large mixing bowl (1), combine the sugar and butter until the texture is light and fluffy. 
  4. Add eggs to the mixing bowl one at a time, beating with a fork or whisk after each egg. 
  5. In another small bowl (2), mash the ripe bananas with a fork. Fun! 
  6. In that same bowl, mix in the milk and cinnamon.
  7. In another small bowl (3), mix the flour, baking powder and salt together.
  8. Add the banana mixture (2) to the creamed mixture (1) until it is completely mixed together. Add in the dry mixture (3), mixing until the flour is smoothly integrated into the mixture. 
  9. Pour the batter into your buttered loaf pan.
  10. Bake for 1 hour OR 1 hour 10 minutes. Stick a toothpick in to check for doneness (clean toothpick = done; wet toothpick = needs 5 more minutes.
  11. Take out and cool for 15 minutes in pan, then remove bread and cool again completely.
  12. Slice and serve!

I personally love to eat my banana bread drizzled with some honey, or if I'm feeling like serving it for dessert, I throw some scoops of ice cream on top and serve with hot chocolate and whipped cream. Or if it's the morning after a big night and you're feeling groggy, shake that sleepiness right out of your system and get yourself ready for the day by downing a slice of banana bread with a piping hot mug of coffee. I'll be eating it in my sunny corner, warmed, with a cold glass of milk, candle lit, snuggled, and reading.
