Recipes: 8-Minute Avocado Toast


Sometimes I get the nibblies. If I'm awake and working from 7AM, the nibblies usually hit around 9:30AM, and if I've had a leisurely day, they without fail start singing their siren songs around 3PM. I need fast, easy, delicious food, stat!

I've made these avocado toasts before but never really thought to write down how to make them. Avocados are a super-food, rich in monounsaturated fat (the good kind!), potassium, folic acid, and vitamin K, and help to lower blood cholesterol levels. I love to put them with eggs, toast, pasta... they give an amazing creamy texture to my food. The whole grain toast is perfect for my low-cal, low-carb preferences, clocking in at around 90 kcal per slice. I love the mini-sized loaves, but the ones I used today are full-sized. They're chock full of sunflower seeds and bits of corn, yum!

What You'll Need (serves 2):
  • 2 slices of whole grain toast (I used the brand Golden Toast)
  • 2 ripe avocados
  • lemon juice
  • pepper
  • garlic powder
  • salt (I used Himalayan pink rock salt because the graininess of the salt rock slowly sinks in)
  • shredded mozzarella/cheddar cheese (optional)
What You'll Do:
  1. Preheat oven to 180ÂșC. 
  2. Cut the avocados in half. Using a spoon, pop out the seed, and then scoop the meat of the avocado into a bowl. 
  3. Add your lemon juice (1-2 tbsp), pepper, garlic powder, and salt to taste. 
  4. Mash it all together until a chunky texture appears (nothing too smooth!).
  5. Place the two slices of bread on aluminum foil and slather on the avocado spread. 
  6. Throw some shredded mozzarella cheese on top.
  7. Bake for 5 minutes or until the cheese is melty.










My repertoire of cooking has graduated from 3-minute microwaving to 8-minute avocado toasts. Upgrade!
