Recipes: Persimmon Smoothie

It's hot! Summer in Korea may be extraordinarily wet this year, but the heat wave continues. To keep cool, I mixed and mashed a few things to make the most refreshing, delicious persimmon smoothies. Best part? It's ridiculously easy (I'm no Masterchef, so duh!) AND perfect for your bikini body diet because there is no added sugar, no dairy, and runs about 100 calories per glass. 

Persimmons are pretty much a winter fruit in Korea, but they're available year-round as a frozen item. I know that they're becoming more easily available in the US and Europe as a seasonal item (mid-October through December). When you blend a ripe persimmon (not frozen), it becomes really thick and gelatinous, perfect for making that thick smoothie quality without adding any binders or dairy. I love the frozen kind that I purchased at Lotte so go peruse the freezer section and look for the brand I bought. 

What You'll Need (serves 1):
  • 2 frozen persimmons (the ones in the cups that I purchased from Lotte come seedless and skinless)
  • 4 cubes of ice 
  • 1 cup of water
What You'll Do:
  1. Take the seedless, skinless frozen persimmons out of the cups and throw them into your blender (I used a Magic Bullet).
  2. Add 4 cubes of ice. 
  3. Blend the frozen stuff first until you get a shaved ice consistency.
  4. Add water and blend until smooth and thick. 
  5. Pour out into a cup and inhale.














My Magic Bullet only had enough capacity for one, so if you want to make more, just repeat until the desired amount. Or you could just double the recipe and make in a giant blender. 

It's sweet but not too cloying, and it tastes deliciously like you're enjoying an indulgent smoothie because of the consistency, but in fact it's about 40% water and 60% fruit. Guilt-free and yummy, perfect for summer!

  4. we LOVE persimmon!! but we have always eaten it fresh we never knew they were avilable frozen. This sounds like a recipe we will have to try! YUMMY!
